Cod Portuguese

The Portuguese are great fish eaters, situated as they are right on the rich Atlantic sea board. One of their favourite fish is cod, but you can use any other white fish in this recipe.

SERVES 4 (change servings and units)

Ingredients

    Heat the oil in a heavy fry pan and saute the onion, garlic and pepper for about 5-7 minutes until softened.

    Add the tomatoes, paprika and orange juice. Season, stir well and simmer for a further 5 minutes.

    Lay the fish fillets on top, cutting them to fit the pan if necessary.
  4. 4
    Season lightly, cover and simmer gently for 12-15 minutes or until the fish is cooked but still firm.
  5. 5
    Transfer to serving dishes and sprinkle with parsley.
  6. 6
    Serve.

My computer went out in middle of previous review so if this the same i apologize. My husband is of Portuguese descent and we both liked this recipe very much. Taking a cue from a previous reviewer, I did add some seasonings of our liking..a bit of oregano and salt and pepper, to add a spark. I like recipes that have good bases such as this. The saute at the beginning with the tomatoes et al. is delicious and I plan to use that elsewhere.This would be good in a chafing dish on a buffet table as cod holds it shape and it is very appealing to look at.

    Nice combination of vegetables and orange juice. I thought that fish did not have a lot of flavor though...
