Tuna and Egg Salad

A simple salad using tinned tuna and hard-boiled eggs

SERVES 4 (change servings and units)

Ingredients

Dressing

Directions

  1. 1
    Whisk the dressing ingredients together and season with the salt and pepper. Set aside.
  2. 2
    Place mixed lettuce leaves onto 4 plates. Add the tomato wedges, sliced onion and capsicum. Top with the eggs, olives and tuna. Sprinkle with the chopped parsley.
  3. 3
    Drizzle over the dressing and serve.

Wonderful! I made this to served two of us! The dressing I blended in the vita mix using grain Dijon. I skipped the olives for DH doesn`t enjoy them. And cut back on the red onions to about an eight of one. Thanks for the yumminess!

    This made a lovely luch for me, I did a half serve for 2 days of lunch and used a mixture of regular tomatoes & semi-dried tomatoes but left out the olives, the dressing is lovely & complements the tuna well. Thanks Jubes, made for ANZ Swap August 2008.
