I picked this recipe for my step-son, who loves mashed potatoes and thinks they are hard to make. Used two large potatoes and kept the remaining ingredients the same. The only thing I would do differently is thickly slice the potatoes so it easier to tell when they are done. The end-product turned out well and my step-son can now make mashed potatoes whenever he wants them. Thanks.

A great proportional recipe for those of us who live alone. I will add it to my For two Cookbook. I used slightly less butter, as I had some leftover buttermilk that I used for this! It was great!! Next time I have company I want to impress, ahem, I am gonna double this one, and I bet it will be perfect. Thanks for posting this one, 462. I hope you don't mind me using your first name!
