    Place 4 bread slices on a work surface.

    Arrange 1/2 cup cheddar cheese on each slice.
  3. 3
    Top each slice with 2 tomato slices and 1 T basil.
  4. 4
    Top with remaining 4 bread slices.
  5. 5
    Heat a large nonstick skillet over medium heat.
  6. 6
    Coat pan with cooking spray.
  7. 7
    Add sandwiches to pan; cook 4 minutes or until lightly browned.

    Turn sandwiches over; cover and cook for 2 minutes or until cheese melts.

    I make sandwiches and quesadillas this same way, but I do use a bit or oil or butter. My daughter especially loves them! Roxygirl

    I've used a variety of cheeses to make this sandwich, and I've used dried basil when I didn't have fresh. It's always good!

    This is such a delightful sandwich! It just hit the spot this evening when we did not want a full meal. I made this on Italian bread, slicing off the crown, spreading olive oil on the outside and seasoning the tomatoes with a light sprinkling of salt and pepper. We will look forward to having this wonderfully flavorful sandwich again, rickoholic83! Thank you!
