Strawberry Snow

Recipe #235542 | 15 min | 15 min prep | add private note
Leggy Peggy

By: Leggy Peggy

You'll want an avalanche of this delicious snow. This recipe was given to me by a friend, Anne. It was a highlight of the menu for my oldest daughter's 21st birthday. Very easy and quick to make. For those who use imperial measure, 500 grams is just over a pound.

SERVES 8 (change servings and units)

Ingredients

Directions

  1. 1
Puree strawberries in a food processor or blender.
  2. 2
Combine strawberry puree, egg whites and sugar in a bowl and beat until stiff and glossy.
  3. 3
Add vanilla to cream, and whip mixture until peaks form.
  4. 4
Gently fold cream mixture into strawberry mixture.
  5. 5
Spoon into a serving bowl and garnish with strawberry slices and mint (if desired).
  6. 6
Cover with plastic wrap and refrigerate until you are ready to serve.
  7. 7
This can be made a day ahead. Good luck keeping everyone else in the house out of it.

If you like light, very fluffy desserts and strawberries, you are gonna love this! Don't whip the cream too stiff like I did b/c then it doesn't fold in easily, and you fold too much and the end result isn't quite as firm as it ought to be. But that was my fault. Made for ZWT4.

What a great end to our dinner tonight. So easy to make, yet the results were fabulous. I love strawberries & this was just lovely. After a roast dinner, it was very tasty, yet not filling. Made for Aus/NZ Recipe Swap #15. Thanks Peggy for sharing this keeper.
