This is a nice little twist on that good old cucumber salad. I found this recipe in Gardening News. Cooking time is the standing time.

SERVES 6 -8 (change servings and units)

Ingredients

    Add the salt to the cucumbers and let them stand in a large bowl.
  2. 2
    After 30 minutes the juice will have drained from the cucumbers.
  3. 3
    Drain the juice from the bowl.
  4. 4
    Rub a second large bowl with the garlic halves. (optional).
  5. 5
    In the second bowl mix the oil, vinegar, water, and sugar.
  6. 6
    Add drained cucumbers and mix well.
  7. 7
    Sprinkle with pepper and paprika.
  8. 8
    Cover and chill for 30 minutes before serving.
  9. 9
    Enjoy.

Very nice tasting salad, just tangy enough, yet sweet as well! Especially liked the subtle flavor of garlic, although another time I might add just a tiny bit more since I like it so much!     Great summer side! Refreshing and really good. I really liked the sweetness the sugar gives the cucumber dressing. Made for ZWT 4

    Wonderful cucumber salad!!!! I added a little garlic salt to replace the rubbing of the garlic clove and left out the sugar, but other than that didn't change the recipe!!! Well I should say except to make it for 2 people. I don't think it was too much vinegar, just right!!! But I guess that is all personal preference!!! Thanks Laffer for a great recipe!!!

    Made for ZWT4...I loved these. The kids would not eat them but I had no problem with eating them. I did make a smaller quantity because I did not think the kids would eat it. I will make this for me often.
