Fluffy Apple Pudding

Mum is not sure where she got this recipe, although she and my aunty are certain it was from their aunty may. This is such a yummy pudding. You really need a mixer such as a kitchen aid for perfect results, but hand mixing is fine. This is excellent re-heated

SERVES 6 -8 (change servings and units)

    once you have made the stewed apples keep them hot or heat them up again in the oven on a low heat before adding the mixture.

    cream butter, egg and sugar.
  3. 3
    keep machine on low and add sifted flour and baking powder.
  4. 4
    keep the machine going and add milk until it is a nice mixture which slides of a spoon but isn't like a milk (sort of like a pnacake mixture).

    pour over the hot apples and bake for about 25 minutes at 375 degrees Celsius.

    will still be moist inside.

    serve with ice cream or cream.

Thanks so much Perfect pixie, I just made this x 4 for 40 people and it turned out great! It was really easy. I needed something satisfying and delicious and able to be expanded easily. Of course it needed a longer cooking time being so much bigger (I used 2 large roasting pans) but it turned out perfect. I added a handful of rasberries to each one. They loved it! Phew! Will definitely use again!
