Parmesan Chicken Skillet

This is a really quick and tasty supper. All you'll need to add is a nice bread and wine.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    Toss chicken pieces with flour, italian seasoning, salt and pepper.

    Heat 2 T butter in large skillet.
  3. 3
    Add chicken and stir-fry to a golden brown.
  4. 4
    Remove chicken and keep warm.
  5. 5
    To skillet add half and half, peas and tomato.
  6. 6
    Cook and stir for 2 minutes.
  7. 7
    Add parmesan cheese.
  8. 8
    Add 1 T butter.
  9. 9
    Return chicken to skillet.
  10. 10
    Toss with pasta.

This was wonderful. I subbed broccoli for the peas and red bell pepper for the tomato because that's what I had on hand and I don't think it made any difference with final results. I also added about a teaspoon of garlic because we love garlic. I served it with warm french bread and a green salad. I know I'll be making this again. Quick and easy with wonderful results. Thank you.

    Oh my goodness! This was so good. Quick, easy and typically all these items are on hand in our kitchen. Thanks so much for such a yummy recipe. DH and I suggest skip the bread and pour another glass of wine. Maryanne

    Hi Inez; Made your Parmesan Chicken Skillet last night and it was delicious, simple and easy to make. I used 1 chicken breast and 10 chicken wings and WOW!! The sauce was exceptionally good. I substituted and used RIGATONI. The sauce lined the inside of the rigatoni, EXCELLENT. Thank you for posting your recipe. Oh yes, served ROSSO GRANDE red wine that I make. "Uncle Bill"
