Sweet Cucumber and Mandarin Orange Salad

Here's one I've yet to try- from "At Home in the Kitchen" by Jorg Morgan. Her recipes are usually grand!! Prep time includes chilling time.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    In a serving bowl, combine the cucumbers, oranges, and onion rings.
  2. 2
    In a small bowl, stir together the sugar and vinegar until the sugar dissolves.
  3. 3
    Pour the vinegar mixture over the cucumber salad. Toss well.
  4. 4
    Add chopped tarragon. Season with salt and pepper.
  5. 5
    Chill 1 hour before serving.

We enjoyed this light and refreshing salad & dressing Kizzikate. What a wonderful way to use the fresh tarragon in my garden. The flavour of the dressing was lovely, semi sweet and slightly tart with a hint of licorice. I used a small vidalia onion and was very pleased with its addition to the salad, I really enjoyed the way it complimented the fresh mandarin oranges and english cucumbers that I used. Thanks so much for sharing.

    This was a very nice surprise! Never thought of mixing cucumbers with mandarin! Only change I made was not to add any onion. Thanks kizzikate!

    I really liked this salad and most certainly make it again. The combination of oranges and cucumbers was bright light and summery. Taking heed from Math Mom I reduced the onion to 1/2 of a large vidalia. The proportions seemed right on. What perplexed me a bit was the dressing. Still can decide if it was too tart or just needed something else. Thinking reducing the vinegar to 1/4 cup and doubling the tarragon will work and plan to try it that way soon.

    Prepared it for a 4th of July block party, and it was not very popular. I guess the people at the party weren't big on onions. I thought it was nice for a change, but not something I'm likely to make again. It is a cool, refreshing, light salad.
