Amish Macaroni Salad

This is from Amish Recipes.Net. It's an hour chill time not cooking.

SERVES 6 -8 (change servings and units)

Ingredients

Directions

    Bring a pot of lightly salted water to a boil.
  2. 2
    Add macaroni, and cook for 8 to 10 minutes, until tender.
  3. 3
    Drain, and set aside to cool.
  4. 4
    In a large bowl, stir together the eggs, onion, celery, red pepper, and relish.
  5. 5
    In a small bowl, stir together the salad dressing, mustard, white sugar, vinegar, salt and celery seed.
  6. 6
    Pour over the vegetables, and stir in macaroni until well blended.
  7. 7
    Cover and chill for at least 1 hour before serving.

Excellent version of a sweet macaroni salad! I thought the ingredients worked well in the amounts listed to make a pretty, colorful salad too. This would be a hit a a summer BBQ or potluck. Thank you for sharing your recipe!

    Very, very good! Darn close to my grandmother's! I used mayonnaise in place of Miracle Whip. I only used 1/2 cup sugar. Amish mac salad IS supposed to be sweet, but I think as written (w/ Miracle Whip and 3/4 cup sugar) it would be way, way, way too sweet. All in all, it's a yummy, colorful, macaroni salad. Thanx for finding this recipe!

    I knew we'd like this macaroni salad even before I made it (maybe that's why I picked it?). I wanted something we could take to the beach with us (in a cooler) to accompany sandwiches and this salad proved to be an excellent choice. We can't get relish here so I just very finely-chopped up some cornichons to get more or less the same flavour (and colour). Also, no Miracle Whip, but I knew I wanted that slightly sweet flavour it has so I added a small amount (a heaped teaspoon) to mayonnaise. The dressing is very pretty with the addition of the mustard and I liked the tang it got as a result. A repeat for us.
