Ginger-Lime Marinade for Chicken

This marinade gives the chicken a fresh flavor. Easy to make and quick. Don't over cook the chicken but make sure it is done.The recipe makes 3/4 cup of marinade enough for 6 breasts or whole legs or 12 thighs/drumsticks

    Mix all the ingredients together with a hand held blender or food processor Marinate the chicken for at least 2 hours then grill, BBQ or bake.

Mmmmmmm.... I cannot believe I forgot to review this FABULOUS recipe!! 5++++ in our book. The marinated chicken was so flavorful and juicy, the veggies fresh and crisp. I served with jasmine rice and a greek salad. THANKS for a new family favorite; I think we'll have this again tonight!

    We loved the taste of this marinade. Both times I used skinless drumsticks and let them marinate all day. Then baked in the oven for 30 minutes in the marinade and finished them on the outdoor grill. Served with roast vegetables. I didn't have enough soy sauce so I used mixture of soy and oyster sauce. Perfect. Thank you.

    Very tasty marinade that I used for 3 large (bone in) chicken breasts. I served the chicken cold in a salad with mango and spinach. Yum! This combination of flavours is really very good. Thanks!

    I have terrible luck with marinades but finally found one I can't screw up This is such a great simple recipe. I halved it and used 3 boneless skinless breasts and seared them in a stainless steel pan then finished in the oven at 350 for about 15-20 min. Very tender and lots of flavor. Thank you--I'll try it with kabobs next time!
