Here's a south-of-the-border lunch or snack, compliments of All You (a new magazine). Use less or more hot sauce depending on how much SpIcE you like!

SERVES 4 , 4 tortillas (change servings and units)

    In a small bowl, mix salsa and mayo; set aside.
  2. 2
    Preheat oven to 350; arrange tortillas on two baking sheets; sprinkle with cheese; bake for five minutes (cheese melts).
  3. 3
    While that's cooking, warm oil in large skillet on medium-high; add chicken, sauce and salt and stir-fry until cooked through.

    Place tortillas on counter, top with lettuce, chicken, tomatoes; roll up, cut in half and serve with the mayo-salsa dip.

    OPTIONS: Black or green olives.
  6. 6
    SUBSTITUTIONS: Crab or shrimp instead of chicken, romaine lettuce for the iceberg, Monterey Jack for the Cheddar, corn instead of flour tortillas.

this was a super quick and easy way to have fajitas without doing a 2 hour + marinade!! I made my own salsa and use a southwestern blended shredded cheese The salsa and mayo sauce is the crowning touch on this recipe great recipe - thank you for sharing!!

    There were many elements in this recipe I liked and I will definitely make it again. I felt the chicken was a little bland and needed some more spices.

    This was a lovely, tasty, quick and easy dinner. I used a smoky bacon salsa and because we're not overly keen on mayo I used sour cream instead. Great for a quick weeknight dinner.

    This was very quick dinner, very easy put together, the tasted was yummy. Only criticism I have is there was way too much of the salsa/mayo sauce, other then that it was excellent. I had to leave out the tomatoes, little hungry person ate them before I could stop her. Thank you Debber.
