Quick Bruschetta for Two

This recipe is adapted from Kraft Foods. It is quick and easy for a weeknight treat. Reduced fat cheese can be used as well as dressing.

SERVES 2 (change servings and units)

Ingredients

Directions

    In a small bowl, mix together the quartered tomatoes, cheeses, basil and dressing.
  2. 2
    Lightly toast the 2 slices of bread, rub the toasted bread with the peeled garlic.
  3. 3
    Spoon the tomato mixture on top of bread and place the under a broiler just until the cheese begins to melt.
  4. 4
    Serve warm and enjoy!

People, People, People. No I haven't tried this recipe--so perhaps you will think I'm wrong to post. But let me tell you, I've done tons of Bruschetta, nothing is better then a good Balsamic vinegar, true virgin olive oil, and fresh basil. Trust me. It is also so very good if you toast the bread with the garlic rubbed on--but put to tomato, mozz, etc on fresh. Unbelievable. Sorry to jack with your recipe. Just wanted to steer people in the right direction.

    I used orange cherry tomatoes from my garden. And I used a bit more of mozzarella. We love cheese LOL Thanks Paula. Made for the Babes of ZWT4

    Yum! I loved the italian dressing here. The taste of this bruschetta made me think of pizza! A delicious, quick and very easy bruschetta! Thanks PaulaG. Made during ZWT 4.

    The only change I would make to this recipe is to double it! It was gone much too soon. Thank you PaulaG for a terrific recipe. Made for Zaar World Tour 4 for the Chic Chefs.
