Black Bean Everthing!

Recipe #227141 | 5 min | 5 min prep | add private note

By: kittycara
May 10, 2007

This was what I did with some leftover black beans that did not get used last night. It turned out really good. I just made enough for one, but am going to try to post as to use a whole can of black beans--so many possibilities.

SERVES 4 (change servings and units)

Ingredients

Directions

  1. 1
Combine the sour cream, red pepper powder and garlic salt in a small bowl till well combined.
  2. 2
Toss together the the black beans, chives and cheese.
  3. 3
Mix the sour cream mixture together with the black bean mixture.
  4. 4
I ate this by itself, but I also think it would work as a dip or even as a wrap sammie.

This was pretty good. I have never had cold black beans. I like black beans, but I really didn't care for them cold. I had leftovers which I warmed up the next day. I added chopped green onions to mine which improved on the flavor a little bit. I will be making this again. Thanks for a great recipe kitycara.

I changed this just slightly to use up some leftover ingredients. I had half a can each of kidney beans and hominy so used them in place of the can of black beans. Otherwise followed the recipe. Wrapped it in a flour tortilla for a quick dinner. Thanks!

Very good! I like to add fresh cilantro and onion as well. This also works well with pinto beans!

This was an alright pita filler that I made for some lunches today. At first I made as stated, but it seemed a little too plain. So I added some chopped onions, celery, and other random veggies I found in the fridge. I used low fat sour cream and cheese and it still tasted fine. Over all a good filler that you can play with to suit your likings.
