Strawberry Strudel Muffins

This recipe makes a great breakfast muffin, and you could easily substitute blueberries for strawberries.

12 muffins (change servings and units)

Ingredients

FOR THE STRUDEL

Directions

    Cream butter and sugar together in a bowl.
  2. 2
    Add egg, mix well.
  3. 3
    In a separate bowl, combine flour, baking powder and salt.
  4. 4
    Add to creamed mixture, together with milk.
  5. 5
    Stir in vanilla, followed by strawberries.
  6. 6
    Fill 12 paper-lined muffin cups with batter.
  7. 7
    In a small bowl, mix together sugar, flour and cinnamon, then cut in butter until mixture is crumbly.

    Sprinkle over muffins.

    Bake at 375 F for 25-30 minutes or until browned.

I got 16 muffins and baked mined for 22 minutes. Strawberry Sweetheart Streusel Muffins is better

    I don't know what happened when I made this,I went exactly by the recipe.This dough was not like a muffin should be at all.It was just like a pizza dough recipe but with strawberries.I managed to fix it up with a bit of flour and milk.Only for I made a few additions these would have gone straight into the garbage.I could not bear to waste all those ingredients.Luckily these tasted ok after that so they managed to avoid the garbage.But I would not make these again.

    These were wonderful! Before adding the streudel, I took a strawberry slice, coated it lightly with cinnamon-sugar, and placed it on top of the muffin. As they baked, it melted slightly and infused the muffin with intense strawberry flavor. Thanks, this is a keeper!

    VERY, VERY good!! The strawberry flavor in these muffins is awesome ! (I used fresh strawberries). I did have to toss the first batch of strudel, though...I tried making it with light margarine and it turned into a big glob. No biggie, though...just remade it with butter, and it was perfect! Thank you for a wonderful recipe!! ~Manda
