Bacon and Potato Frittata

    Place bacon in 10-inch nonstick skillet over medium-high heat.

    Cook, stirring occasionally, until browned, 5 minutes.

    Add potatoes and onion; cover.
  4. 4
    Cook, stirring occasionally, until tender, 6-7 minutes.

    Beat eggs, 1/2 cup water, 1/2 t salt and 1/4 t pepper; stir in broccoli and 1/2 cup cheese.

    Add to skillet, cover.

    Over medium heat, cook until set, 8-10 minutes.

    Remove from heat.

    Sprinkle with remaining cheese; cover.

    Let stand until cheese is melted, 2-3 minutes.

YUM! Made for the Frittata Challenge for ZWT4. Wow, I've made "scrambles" but this was my first frittata! I had some red bell pepper which really looked festive and tasted great. I used more cheese, about 1 1/2 cups total, including some mozzerella I had leftover. I did turn the burner down to low and let it set up while moving bits of it and letting the liquid fall to the bottom of the pan. We weren't in a hurry, so it took about 15 minuteson low. This recipe will be used often for a nice summer supper. I will even use Egg Beaters to reduce the fat. It's a keeper, thanks, Lainey

    This was my first time making a frittata and this was a great one to begin with. It was very easy to make and I loved the flavors of the bacon, potatoes and broccoli in this dish. Yummy! Made for ZWT4.

    Delicious! I didn't have any broccoli so I just added a little extra bacon and potato. Mushrooms may be a nice addition next time. This was very quick and easy to put together. I would definitely make again. Made for ZWT4
