What is there not to love about this carb fest??? I scaled the recipe in half for the two of us for dinner... I actually parboiled my potatoes first for 10 minutes and as I was finishing up the rest of dinner, I cooked them for about 7 minutes after mixing in the cheese and butter... so delicious! I used center cut bacon, extra sharp cheddar and garnished with lots of sour cream and fresh onion chives from the garden! Thanks for a delish side to accompany all meats!!!

You can't go wrong with this recipe. I served this during our 4th of July BBQ. It was great that I did not have to heat up the oven. I cubed the potatoes in larger cubes so it did take a bit longer in the microwave but it all worked well! Huge hit with everyone at the BBQ. Made for Zaar Cookbook Tag.

Absolutely WONDERFUL!!! I opted for an oven method, though. I had 3 things going on the stove, so made these in the oven instead! Tossed them with melted butter, s&p'ed them, and baked them at 350 (covered) for 45 minutes. Took them out, topped them with cooked bacon broken into pieces, then a lot of shredded cheddar and mixed Italian white cheeses, and popped them back in (covered) for another 15 minutes. They were AWESOME!!! My hubby thanks you, too!!!!

Delicious simple potatoes! I used new red baby potatoes and fiesta blend cheese. I cooked them on top of the stove instead of the microwave - just a personal preferance. Served with scallion and ranch sour cream.
