Light Ham and Cheese Casserole

This is a trimmed down version of recipe 146435 posted by Fauve. It is great to use up leftovers from a ham and mash potato dinner! Season with salt and pepper to taste or whatever seasonings you prefer.

SERVES 4 (change servings and units)

Ingredients

Directions

    Preheat oven to 350.
  2. 2
    Spray 1.75 qt casserole dish with non-stick cooking spray.
  3. 3
    Spread mashed potatoes along bottom of the casserole dish.
  4. 4
    In a medium sized mixing bowl, combine ham, cottage cheese, mushroom soup, croutons, milk and 1/2 cup shredded cheese.
  5. 5
    Layer on top of mashed potatoes.
  6. 6
    Sprinkle top of caseerole with 1/4 cup grated cheese and a slight layer of bread crumbs.

    Bake for 30-35 minutes at 350, or until top is nicely brown.

    I made a few changes to this recipe, I added in 1 teaspoon garlic powder, 1 small onion and some cayenne to the soup mixture and went the full-fat option, this is a great recipe to use up leftover mashed potatoes, my family enjoyed this thanks for sharing hon!

    A perfect "after work, boy howdy am I tired, how about a casserole" dish. The whole family enjoyed it. The leftovers were excellent. My co-workers were sniffing around like little vultures! Thanks for the great recipe!

    This was really easy to throw together. I didn't have any leftover mashed potatoes but I had a box of Velveeta Cheesy potatoes, so I made those up. My son has an aversion to cottage cheese so I made him his own little casserole; I just reduced the cottage cheese down to a 1/4-cup for the big casserole. I used garlic and herb croutons, which added a nice flavor. We will for sure be making this again.
