Fluffy 7 Minute Frosting

This was my absolute favorite frosting when I was growing up. It is so light, fluffy and fat-free too.

SERVES 12 , 1 frosted two layer cake (change servings and units)

Ingredients

Directions

    Combine sugar, water, egg whites, corn syrup, and salt in the top of a double boiler; blend.
  2. 2
    Place over simmering water.
  3. 3
    Using an electric mixer, beat the mixture constantly at high speed for 7 minutes or until the mixture triples in volume and holds firm peaks.

    Remove from heat; beat in vanilla.
  5. 5
    Spread on cooled 2 layer cake.

This is my ALL TIME favorite icing. My mouth is watering just thinking about it. I haven't made it in years but decided I wanted to have it for Easter Dinner. I LOVE it on Angel Food Cake - Homemade (my favorite cake)... ymmmmmm

    I can't figure out what I did wrong because I followed the recipe (except for halving the ingredients). It never set up for me, never thickened so it was no where near forming stiff peaks. I beat it and beat it but it never happened. I kept it up for at least 15 minutes. I had to throw it out. I'm not giving any stars so I don't affect that current rating but it didn't work at all. Maybe you can't halve the recipe.

    This was easy to make and resulted in a stiff, satiny, frosting that looked beautifull on my cupcakes. After adding the vanilla, I stirred in some food color. And added sprinkles after frosting my cupcakes, there was more than enough frosting for 18 cupcakes

    This frosting is wonderful. I was looking for an easy recipe for frosting to finish my daughter's b-day cake and came across this one. It was very easy and I had all the ingredients around the house. It is great! Try this, you won't be dissapointed!!
