Simple and totally easy to prepare. Works well as a quick side for meatloaf, hamburgers, or Salisbury Steak, or just plain steak!

SERVES 4 (change servings and units)

    Heat oven to 375 degrees.

    Mix together cornflake crumbs and seasonings in a medium bowl/ or medium Ziploc bag.
  3. 3
    Brush whole potatoes with butter.
  4. 4
    Coat potatoes with cornflake crumb mixture.
  5. 5
    Arrange in an un-greased baking pan, 9X9X2 inches.
  6. 6
    Bake uncovered for 1 to 1 1/4 hours or until potatoes are tender.

    Serve with a dollop of sour cream and chives, if desired.

Andi - I was not sure what to expect from these potatoes... they are terrific. The addition of the cornflake crumbs to the potato well just added such a nice pizzaz to the normal hum-drum baked potato. The only change I made was I did NOT pare my potatoes and the skin gives such great nutrients. The cornflake mixture still stayed on perfectly and baked the skins nice and crispy. Made as a Pay It Forward in the SCC Pet thread. Thanks Andi for sharing!

    What an unusual and tasty idea! I topped mine with sour cream and a little salsa and it was delicious! The crunchy outside was so tasty and I think these could be topped with so many things - thanks for sharing!

    Andi these potatoes are so good! Loved the crunchy coating from the cornflake crumbs. I baked two potatoes since it was me and DH for dinner tonight so eyeballed the amount of crumbs to roll the potatoes in. Did top with sour cream and chives, very tasty. Served with looneytunesfan's Salisbury Steak and enjoyed a great meal.

    Different. And just as easy as can be. The cornflakes added an unexpected tastiness to the same old roasted potato! Will make this one again.
