Citrus Spinach Salad

A nice, refreshing twist on a spinach salad - a perfect compliment to any holiday meal! Great with Ham! ****Noteworthy - this makes quite a bit of dressing - so depending on your taste, you may want to increase the amount of salad fixings or slightly decrease the dressing (or just save it for another day!!).

SERVES 2 (change servings and units)

Ingredients

  • 2 cups spinach leaves, fresh (OR 2 cups torn Romaine Lettuce)
  • 1/2 small red onion, thinly sliced
  • 1 navel orange, fresh peeled and separated into sections (or 2 blood oranges or 1/2 small can of mandarin oranges)
  • 2 tablespoons pine nuts, toasted

Dressing

Directions

  1. 1
    Toss spinach, onion, oranges and pine nuts together.
  2. 2
    Whisk together all dressing ingredients.
  3. 3
    Pour over salad and serve.

    This is a delicious and refreshing salad! The dressing is just fantastic. Most of the family are not fans of spinach so I had to make it with romaine, but I made extra dressing and will be using it on spinach for lunch tomorrow for ME! I served this with some spicy shrimp and it was terrific - thanks for sharing!

    I enjoyed this very much along with a dish of creamed mushrooms for dinner. I did leave out the pine nuts(I forgot!). Thanks!

    This is a wonderfully sweet and tart salad. Loved the addition of pine nuts - gave it a nice taste and crunch. Had this for lunch. The dressing I used sparingly but ended up adding it all at the end anyway, cuz it was too good. Thanks for a wonderful salad. ~V (Made for Bevy Tag)
