Herbed Lemon Chicken in a Crock Pot / Slow Cooker

This is a lemon herb garlic chicken dish which is made in a slow cooker to contain it's natural flavours. When we served it the meat fell away from the bone. If you wish to increase the celery and carrot you may do so without dramatically change the flavour of the dish. I normally remove the skin off the drumstick, which I recommended with this dish but feel free to leave it on. Everyone enjoyed it in our house hold, hope you will enjoy it.

SERVES 4 (change servings and units)

    In a hot non-stick pan, add butter and melt.

    Add chicken drumstick and brown or seal chicken.
  3. 3
    Place celery & carrot on base of crock pot/slow cooker.
  4. 4
    Add brown chicken drumstick into the crock pot/slow cooker, making sure the chicken drumstick are not sitting on top of each other (must be laying side by side). Pour left over juices in the pan into the crock pot/slow cooker.

    Pour chicken stock and lemon juice on top of drumstick.
  6. 6
    Sprinkle onions, garlic, parsley, oregano, salt and black pepper on top of the chicken drumstick.

    Cover and cook on 'Low' setting for 6-8 hours. (Depending on you crock pot/slow cooker, mine tenders to cook quickly even on the slower setting).

    Serve with juices on rice or with crusty bread.

The general comments were anywhere from 3 to 5 stars such are the differences in tastes. I used a 2 k whole chook which I quartered and skinned (ended up with 4 pieces weighing 1.2K) and they fitted just snugly into the crockpot and were fall apart tender after 6 hours on auto (think drumsticks would be done in 4 hours in my Kambrook crockpot). Due to allergy issues I omitted the celery and used 2 carrots and fresh oregano and parsley. No salt as I used a commercial stock and I feel they have a enough salt in them already.     This is a delicious and simple dish that we enjoyed very much. The chicken was beautifully moist and fell off the bone. Great for an easy family meal, but could be tarted up for a dinner party. Next time I make it, I will add some preserved lemon to add to the lemon flavour. Thanks for a great keeper!

    My husband loves crockpot recipes and this one was no exception! Fall off the bone tender and very flavorful : ) When I first read the ingredients list in this recipe, I was not sure if I was suppose to de-bone the legs. But after reading the steps I realized the legs were to remain whole. I did not remove the skin, but allowed the legs to cook in the crockpot, bone, skin and all, after a quick browning in the pan. I made as otherwise directed for a fantastic supper! I served with rice and Evie's Balsamic Asparagus. Thanks, Chef FloWer!

    This was easy and fantastic. I used the left over chicken to make wraps the next day. I will be making this again!!!
