Mint Limeade

This is from Cooking Light magazine. The fresh, cool flavor of mint is a welcome addition to this warm-weather drink. Try serving it as a refreshing cooler with spicy Asian food. **I just made this for a potluck recently and everyone raved about it. I thought the sweetness was just right but I like sweet. Since a couple of reviewers thought it was too sweet...if you don't like sweet... start with less sugar and add more at the end.**

Ingredients

  • cups water, divided
  • 1 3/4 cups sugar, less to taste or Splenda sugar substitute, to taste
  • 1/3 cup fresh mint, coarsely chopped
  • cup fresh lime juice (about 12 limes)
  • 10 mint sprig, to garnish (optional)
  • 10 lime slices, to garnish (optional)
  • Directions

      Combine 2 cups water, sugar, and chopped mint in a small saucepan; bring to a boil.
    2. 2
      Cook until sugar dissolves, stirring frequently. Remove from heat, let stand 10 minutes.
    3. 3
      Strain through a sieve into a bowl; discard solids.
    4. 4
      Combine the remaining 4 cups water, sugar syrup, and lime juice in a large pitcher, stirring well.
    5. 5
      Serve over ice, garnish with mint sprigs and lime slices, if desired.

    This was wonderful engrossed. I used fresh mint and lots of lime. The amount of sugar was perfect for me. This is a lovely tasting, refreshing limeade. I can't wait to try it this summer with chocolate mint from my garden. Thanks so much for sharing a new favourite drink, which I will make often...Kudos

    This was very refreshing and cool with a nice combination of lime and mint. I found the sugar to be appropriate to my tastes as well. This would be a great way to make mojitos in advance, just add rum and ice!

    Very tasty! I used Splenda, lemon mint and spearmint, and I think I would use more mint and less Splenda next time. Much lighter tasting than commercial limeade. Thanks for a new summertime drink!

    Reviewed for the ZWT3. This was a seriously refreshing drink and simple to make. This limeade was a total HIT in our house and will certainly be made again over the summer and beyond I'm sure
