Cauliflower Cheddar Fritters

Crispy cheese-filled fritters with mild cauliflower and onion flavors. Easy to make and to-die-for delicious! My 3 year old loves to dip 'em in ketchup.

8 -10 side dish servings (change servings and units)

Directions

    Make a smooth batter with first 7 ingredients.
  2. 2
    Mix in next 3 ingredients.
  3. 3
    For best results, refrigerate for an hour or so (but not necessary).
  4. 4
    Drop by spoonfulls into hot oil and deep fry til brown and crispy.
  5. 5
    Sprinkle with salt immediately upon removing from oil.

These were really tasty! I made a double batch so I could try them out several different ways. I baked them and they were delicious (12 mins at 425 as another reviewer suggested), I pan fried them and they were wonderful but very slow for me to make so they would keep their shape, so I ended up making large pancakes with them and they were still delicious and fluffy. Thanks so much for sharing the recipe!

    These fritters are fantastic. My husband and I make them almost daily. After a few different attempts, we found that chopping the cauliflower quite finely and also not using so much oil in the pan produced wonderful results. Thanks for this awesome recipe.

    These were really yummy...however I baked them in a 425 degree oven for about 12 min and they were quite tasty (my parents are on a diet, fried foods are supposed to be out of it), but these were still great, and I felt good getting in some more veggies!!!

    Delicious, and easy. Try them with ranch dressing. I cooked them in a T-Fal deep fryer at 350 degrees.
