Banana Fritters With Brandy Sauce

Recipe #216462 | 40 min | 20 min prep | add private note

I found this recipe in my Mother's Recipe Box. It looks as though it was clipped from a magazine. The description to the recipe states as follows: " The Koran says that the fatal fruit in the Garden of Eden was a banana, not an apple. If Eve offered Adam banana fritters drenched in brandy sauce it's no wonder he succumbed to temptation." Enjoy ; )

SERVES 2 -4 (change servings and units)

Ingredients

Banana Fritters

Brandy Sauce

Directions

  1. 1
Sift together the flour, baking powder, salt and sugar.
  2. 2
Combine the egg, milk and melted shortening; add the liquids to the dry ingredients and mix until smooth.
  3. 3
This will make a very stiff batter, but it will remain refreshingly crisp for some time after it's been cooked.
  4. 4
Cut each of the bananas into 3 chunks, dust with flour and coat with the fritter batter.
  5. 5
Fry in hot deep oil (375 F) until golden brown, turning often.
  6. 6
    Drain on paper towels.
  7. 7
    To Make Brandy Sauce:.
  8. 8
Measure the sugar, cornstarch and salt into a saucepan.
  9. 9
Gradually add the boiling water, stirring constantly.
  10. 10
Simmer over low heat for about 5 minutes, or until clear and thickened.
  11. 11
Remove from the heat and stir in butter, brandy and nutmeg.
  12. 12
    Serve warm over banana fritters.

These were very good without the Brandy Sauce. However, the sauce puts these babies right over the top. Wonderful flavor that we enjoyed. The crust was nice and crispy. Thanks Bev

This deserves 5 stars for flavor and the end result but they were a bit more trouble to make. The batter would not stick to the bananas! My husband ended up rolling out the dough and then wrapping pieces around each banana chunk. It worked...if it hadn't I was going to mash the bananas into the dough for drop doughnuts. Also the melted shortening solidified when added to the milk and egg so I had to heat it up...I'm wondering if oil would have worked? I used dark rum in place of the brandy. I also think this makes 9 servings as it made 9 fritters and each one was fairly large and enough for 1 person. Thanks for the recipe. Made for 1-2-3 hit wonders.
