Cocoa Cola Cake

Ingredients

• 18 1/4 ounces white cake mix
• 1 cup Coca-Cola, not diet
• 2 eggs
• 1/2 cup buttermilk
• 1/2 cup butter, melted
• 1/4 cup baking cocoa
• 1 teaspoon vanilla extract
• 1 1/2 cups miniature marshmallows

FUDGE FROSTING

• 1/4 cup baking cocoa
• 1/2 cup butter, cut into small cubes
• 1/3 cup cola, not diet
• 4 cups confectioners' sugar
• 1 cup chopped pecans, toasted (optional)

Directions

   Preheat oven to 350 degrees.

   In a large mixing bowl combine cake mix, cola, buttermilk, melted butter, cocoa, and vanilla extract.

   Beat on medium speed for 3 minutes.

   Fold marshmallows into batter.

   Grease a 13 x 9 pan.

   Pour batter into pan.

   Bake for 35-40 minutes or until a toothpick inserted near the center comes out clean.

   Cool in pan on a wire rack for 15 minutes.

   In the meantime, combine cocoa and butter in a saucepan.

    Cook over low heat until butter melts.

    Stir in cola and stir until blended.

    Bring to a boil, stirring constantly.

    Remove from heat and add confectioners sugar.

    Stir until smooth.

    Fold in pecans if using.

    Spread over cake.

    Let stand 20 minutes before cutting.
