Chinese Sweet and Sour Vegetables

We had this tonight and it was just wonderful so I thought I would share. The sauce is just thick enough to stick to the vegetable perfectly.

SERVES 4 (change servings and units)

Ingredients

Directions

    Add 1/2 cup water to large skillet with a tight-fitting lid and bring to a boil over high heat.

    Add carrots, cover and steam for 4 minutes.
  3. 3
    Remove lid and add an additional 1/4 cup water and bring to a boil.

    Add broccoli and red peppers.
  5. 5
    Reduce heat to medium.
  6. 6
    Cover and steam another 4 minutes or until vegetables are crisp-tender.

    Meanwhile, combine cornstarch and sugar in small bowl.

    Blend in pineapple juice, soy sauce and vinegar until smooth.

    Transfer vegetables to colander and drain.
  10. 10
    Stir pineapple mixture and add to skillet.

    Cook and stir 2 minutes or until sauce boils and thickens.

    Stir in sesame oil.

    Return vegetables to skillet along with the green onions and toss with sauce.

This is very nice, and simple to put together. I left out the peppers, as I couldn't find any in the store today. So I put in extra broccoli and carrots. Very quick to get from the chopping board to the table. Thanks, Nimz! Made for ZWT 4.

    Very nice sauce for vegetables. I had to boost it with a bit more of everything, but it was simple and flavorful. I also added a can of sliced water chestnuts. Thanks for sharing!
