Trieste Pork Stew

Recipe #214250 | 2½ hours | 30 min prep | add private note

Mario Batali's that I've adapted to use a few more common ingredients...I wasn't much of a stew person until I tried this and was in love. This is so simple, caramelized, and rich, yet lighter due to the chicken stock, that it is now my goto stew recipe.

SERVES 6 , 1 pot full (change servings and units)

Ingredients

To serve

Directions

  1. 1
In a Dutch Oven, heat the oil over medium heat.
  2. 2
Season the pork with salt and pepper and add to the oil and sear on all sides, working in batches if necessary.
  3. 3
Add the sliced onions and cook until they are browned and soft, about 10 minutes.
  4. 4
Add the wine and allow it to evaporate completely.
  5. 5
Add the paprika, bay leaves, rosemary.
  6. 6
    Stir in tomato paste.
  7. 7
Cook for 3-4 minutes over high heat, then stir in the chicken stock.
  8. 8
Reduce heat to simmer, cover, and cook about 1.5-2 hours, until the sauce has thickened.
  9. 9
Stir in the lemon juice and season well with salt and pepper.
  10. 10
Serve immediately with buttered hot pasta.

My husband and son said this was ok.But I did not care for it. So around here if the cook does not like it, you probley won't get it agin.I cut off one stalk of rosemary, and think it was too much. Also only had regular paprika.Perhaps should have used a bit of smoke.May try again, sure sounds good.

This recipe is really interesting. It really awakened my taste buds and was restaurant quality. I made a few changes due to diet restrictions. I used a leaner cut of pork, chicken broth instead of stock, and served it with whole wheat pasta and broccoli. Thanks.
