I didn't have a lemon, so I used an orange instead. These are so fluffy and yummy!

Yummy! Great muffin! But you really do need a muffin tin, for the paper cups! (which I don't have). I used a little less lemon grind then suggested, but they were delicious just the same.

I have been searching for the perfect blueberry muffin recipe and this is the best one so far. I only used the rind of half a lemon so the flavour wouldn't be too strong and I added 1/2 tsp of cinnamon to add some depth to the flavour.

This one was just okay for me. I am a big fan of blueberry muffins, but the lemon seemed to overtake this recipe. If I ever try this one again, it would definitely be without the lemon. When I eat a blueberry muffin, I like to experience the taste of the blueberries instead of feeling like I'm eating a fruit medley.
