Not that this salad needs another 5-star rating, but it really deserves it. We were vacationing in Maui 4 years ago and found this fabulous potato salad at the deli. All four of us (my partner and two close friends), one of whom is VERY picky all loved this. We seriously went back every other day for more to go with sandwiches at lunch, or whatever we'd grill at night for dinner. When we returned we agreed to try to find the recipe. And here it is! One of the friends prefers to nuke her portion in the microwave and eat it warm. Either way, this is one potato salad you should try!!

I served this for Easter family dinner and it was received with mixed reviews. I loved the taste, but I did add more dressing as I felt it was too dry. I followed the recipe and after adding more dressing I liked it and it was just as good the next day. The recipe is a nice change from the standard potato salad, but I don't think I will take it to a family get together again. Thanks, Carole in Orlando

This was a great recipe. It does not make a huge amount, so if you want to serve it for company or a cookout, you need to double it. However, it is the perfect amount for a family. It is a nice chage of pace from a regular potato salad. I did use red bliss potatoes and boiled them, rather than using baked Idahos. I find that Red Bliss holds their shape a lot better than Idaho or Russets and do not fall apart or become mealy. Aside from that, I followed the directions exactly. Thanks for a good recipe.

This recipe is quite similar to the baked potato salad a little store in town sells. I accidentally added too much paprika to mine (somehow I read it as 1 tbsp paprika and since I was in a hurry and busy making other items concurrently it didn't strike me until the paprika had already sunk into the potatoes what I had done), but even so it was very tasty and I could tell that preparing the recipe as stated would produce excellent results. I was going to post a photo as well, but since the paprika made the potato salad a little bit too reddish-orange, I will wait till next time to upload one. I will also give a star rating then as well, but you can bet it will be 5 stars as tasty as this salad was already. Thanks for posting! Updated 07-07-04: I prepared this again without so much paprika in it and it was as wonderful as I hoped for. Tastes like a loaded baked potato. Excellent! Thanks again!
