This is a great finger food for any gathering, especially with the combination of cranberry & ginger! It comes from the fall 2004 issue of the Kraft 'food&family' magazine. The original recipe calls for Planters Cocktail Peanuts.

SERVES 18 , 6 cups (change servings and units)

Ingredients

    Preheat the oven to 350 degrees F.
  2. 2
    Place butter & sugar in large microwavable bowl, & microwave on high 1-2 minutes or until butter is completely melted when stirred.

    Add ginger & mix well.
  4. 4
    Add cereal & toss gently.
  5. 5
    In a single layer, spread the cereal mixture in a greased 15"x10" baking dish.
  6. 6
    Bake 15 minutes, then remove from oven.
  7. 7
    Stir in peanuts & return to oven to bake an additional 10 minutes.

    Cool completely before adding cranberries. Toss gently.

This is a great munchie food! The more you eat, the better it gets, and the more you want, lol. I did top with a little salt as the nuts were unsalted and used Craisins. Thanks!

    This was good and easy to make. I followed the recipe exactly as written. This is great munchy food. Everyone in the family enjoyed it. Will make again.

    Wow, this was great Syd. I used candied ginger and candied orange peel because I was out of dried cranberries. What a quick and easy treat to throw together. I'll be making this for the dh often, thanks so much for sharing.

    WOW, Eye popping WOW !!! Syd, you are a marvel ! Ok.. first off, info for anyone in NL who wanted to make these, the shredded wheat thingy's can be bought at the Thomas Green (British food shop)ditto the dried cranberries. I was confused by the fact that butter was mentioned in the igredient list but margarine was mentioned in the instructions. I made it the first time with butter.. and found that the sugar/butter/ ginger mixture made rather a thick paste and it was quite hard to coat the little bales of shredded wheat, because it kept clumping together, so I made a second mix using margarine and it gave me the smoother more liquid effect I was looking for. After a quick taste of the first batch I doubled the ginger in the second one, seriously yum!!! and I baked both batches for longer in the oven, because the more toasted the little bales got the better they tasted. I also roasted peanuts and cashews for longer and they came out georgous too. When it was cooked and cooled I added dried cranberries, sultanas, currents, and raisins (no: they are not the same things!) and I have some dried apricots and prunes to take seperately to work and to munch on with these ... excellent !!! Please see my rating system: a fantastic 5 stars for a recipe that is startlingly good. Shredded wheat might LOOK like little bales of hay but with this recipe it certainly doesn't taste like little bales of hay !!! Thanks!!!
