Mediterranean Scallops

Very healthy and delicious to boot!

SERVES 4 (change servings and units)

Ingredients

Directions

    In a large skillet, heat oil over medium heat; add garlic and shallots, sauté for 1 minute.

    Chop tomatoes.
  3. 3
    Stir in tomatoes and juice, tomato sauce, herbs, salt and pepper.
  4. 4
    Simmer for about 10 minutes.
  5. 5
    Stir in scallops and continue to gently cook about 5 minutes, only until scallops are cooked through.

    Meanwhile, cook linguine according to al dente package directions.
  7. 7
    Drain pasta and divide evenly among four warm pasta bowls (about 1 cup each).

    Top with scallops mixture.
  9. 9
    Garnish with fresh basil leaves, if desired.

    Serve with tossed green salad and Italian bread.

    Serve immediately.

    Very good. I added some mushrooms and some grated carrots to the sauce. I think this would be really good with a mix of shrimp and scallops. My DH says this is a repeater. Thanks for posting. I did use regular salt.

    I added fresh mushrooms and shrimp. This dish tasted amazing, and it was very easy!!

    This recipe is simple, quick, tasty, healthy & GREAT!! Lots of good flavour. I added a bit more red pepper flakes because I like things spicy. As good or better than anything you would find in a nice Italian restaurant.
