This is out of one of my old weight watchers cookbooks back in 2000. Called "Just like Home". It was one of my favorite dished to make. Only has 5 points. Save the leftovers to make Ww Baked-Potato Soup. I'll post that recipe also.

SERVES 8 (change servings and units)

Ingredients

    Preheat oven to 400 degrees.
  2. 2
    Bake potatoes for 1 hour or until tender. (I have zapped them in the microwave, but the oven is best).

    Let cool slightly.
  4. 4
    Cut each potato in half lengthwise; scoop out pulp into a large bowl, leaving a 1/4-inch-thick shell.

    Mash pulp with a potato masher.
  6. 6
    Add milk and next 5 ingredients; stir well.
  7. 7
    Spoon potato mixture into shells.
  8. 8
    Place on a baking sheet; bake for 15 minutes or until thorougly heated.

    Sprinkle each potato half with 1 1/2 teaspoons green onions; top evenly with crumbled bacon.

Yummy! I wouldn't have guessed that this was a WW recipe because of the rich creamy flavor. I love feta cheese and it really added some pizazz to this stuffed potato. Thanks Teresa. Once again, you've helped me to get DH to love baked potatoes! Made for PAC Fall 2008.

    Delicious. Lighter than many stuffed potatoes in spite of the cheese and the bacon. A very nice side dish.

    This is really good! I would never know it was a Weight Watchers' recipe if you didn't tell me! I did halve the recipe. I will make this again! Thanks for sharing.

    Hello Teresa, just got back upstairs after eating my baked potato full of all that yummy stuff! This recipe is awesome! I just did two things differently & that was to use Italian Seasoning and rushed red pepper flakes & was it delicious!! Made for "I Recommend ....New Thread" & on puppitypup's recommendation.
