Pea Soup--No Meat

Plain pea soup. Smoky flavor can be added with seasonings.

Ingredients

  • cups dried split peas
  • large onion
  • large carrot
  • 5 celery rib
  • small potato
  • tablespoons olive oil
  • thyme
  • salt
  • pepper
  • Directions

    1. 1
      Rinse peas, set aside.
    2. 2
      Chop all veggies, season with salt, and saute in olive oil.
    3. 3
      Add peas and 2 quarts water.
    4. 4
      Cook until done.
    5. 5
      Puree, adjust seasonings.

    I make a similar soup, but with a couple of changes. I use vegetable or chicken stock instead of water. I add a dash or two of liquid smoke or cumin to add the smoky flavor. I also use 1-2 bay leaves for additional flavor. My husband still prefers it with ham, but since I like it without better, he adds a little after it has been made. It is a great soup!
