Chicken Breasts With Broccoli & Cheese

Sometimes I just like it simple, & this is another one of those chicken breast recipes I've had around for 25 years & enjoy [both making & eating]! This dish is great over rice, pasta or stuffing!

SERVES 4 (change servings and units)

Directions

    In a skillet, over medium heat, melt the butter, then add the chicken breasts & cook 10 minutes, browning the meat on both sides.
  2. 2
    Spoon off any fat.
  3. 3
    In a medium bowl, combine the soup, water & pepper & pour this soup mixture into the skillet with the breasts.
  4. 4
    Heat to boiling, then add the broccoli & reduce the heat to low.
  5. 5
    Cover & simmer, stirring occasionally, for 10 minutes or until chicken is fork-tender & the broccoli is done.

This was very good and easy. My DH actually made this by himself. He rarely cooks, so I was very proud. We served it with whole wheat rotoni. He cubed the chicken and cut the broccoli small and it was perfect.

    This is a very good recipe. It is simple, quick and delicious. The trifecta for a 5* reveiew. Perfect served with steamed rice.

    This is so simple and good! I was going to post this recipe tonight after making it from an old Campbell's recipe booklet, but now I don't have to . The only things I did differently were to use a 12 ounce bag of broccoli florets, use about 2/3 cup milk in place of the water, and add some minced garlic (2 teaspoons) and some Trader Joe's 21 Seasoning Salute. Oh, one more thing: I found that the broccoli took about 20 minutes to cook. Next time I will chop it much finer. Yum!

    The chicken was very juicy and tender. The sauce was good. The only change we made was to mince in 3 garlic cloves and 1/3 cup onions.
