Karen, these were so good! I made mini muffins and I got 40 of them. I cooked for 15 minutes for mini-muffins. I did add a bit of salt and some garlic powder, but felt they could have used still a bit more flavor. Maybe some chopped garlic or some more flavorful cheese? They were so quick and easy and I will definitely make again. Thanks for posting!

I liked these a lot! They were almost quiche-like. The only thing that I would do differently would be to add spices or even just some salt. I also liked mikekey's suggestion of using cheddar, but I think that would make it a completely different recipe. Thank you!

We loved these little babies. I made them my mini muffin pan and added a teaspoon of salt as suggested from another review along with a pinch of cayenne pepper and white pepper. I used green onions for the onion. Still had to cook them for 20 minutes. Very tasty. Thanks

My husb. gave me this rating on what I did with this recipe. I happened to have a box of that muffin mix and this seemed like the cleverest idea of how to make them more to my liking. I was certain I had frozen spinach on hand, but didn't!!! I did not make this discovery until after I had begun the muffins, so I searched through my mess of a freezer to see if I had any frozen veggies and came up with a box of broccoli (?? - mystery box)...I know this is a offensive breaking of Zarr recipe review rules to some...my apologies. I also noted the advice that the other reviewers had stated and added salt, pepper, a pinch of chipotle and a sprinkle of cheese (this was a "taco blend" store brand shredded cheddar, jack mixture)- so I spiced it up quite a bit! - I was pleased with the results and will try them again with the spinach. They were very quiche like as one reviewer already stated and a cute, quick idea. - Thanks Karen67 and thank your sister too!!!
