1-2-3 Jambalaya

This simple recipe from Southern Living is as simple as 1-2-3! This is a great recipe for when you really want some jambalaya and just do not have the time to stand over the stove! It was published in the December 1997.

Ingredients

  • large onion, diced
  • large green bell pepper, diced
  • lb smoked sausage, cut into 1/4-inch slices
  • tablespoon olive oil
  • cups cooked chicken, chopped
  • cups long-grain rice, uncooked
  • 2 (10 1/2 ounce) cans French onion soup, undiluted
  • 1 (14 1/2 ounce) can chicken broth
  • 1 (14 1/2 ounce) can beef broth
  • 2-3 teaspoons creole seasoning
  • 2-3 teaspoons hot sauce
  • Garnish

    Directions

    1. 1
      Sauté first 3 ingredients in hot oil in a Dutch oven 4 to 5 minutes or until sausage is browned.
    2. 2
      Stir in chicken and next 6 ingredients.

      Bake, covered, at 350° for 40 minutes, stirring after 30 minutes. Garnish, if desired.

      serves 8-10.

    This was really easy, and good too. MIne was a little on the dry side, and I had to cook it for an additional 30 minutes, I'll definitely make this again!

    Most excellent Bev! My daughter and I are somewhat spice challenged and I really liked the sound of this recipe. Not too spicy. Well, truth be told, I did cut back a bit on the amount that was listed, but it tastes very good. Everyone had seconds.

    This was very easy and tasted great. I used 1/2 lb of sausage. I cooked my chicken breasts in the crock pot on high for a few hours and shredded it up. I was surprised when I was making this that it did not have tomatoes, but I didn't miss them.

    I made this Jambalaya when I had a house full of company. It was a hit! However, the cooking instructions are wrong. At 350 degrees, after 30 minutes when it was time to stir, it was extremely soupy. There is no way this recipe could be cooked in 40 minutes at that low temperature. I ended up turning up the oven to 375 and checking it every 20 minutes. I know it was about 1 and 1/2 hours before it was done. But it was a real winner as far as taste. Everyone who tried it wanted the recipe. Thanks Bev!
