Chicken Noodle Soup

Great on a cool day.

Ingredients

  • teaspoons butter
  • cup sliced celery
  • cup chopped carrot
  • 1/2 cup chopped onion
  • small potato, diced
  • teaspoon thyme
  • teaspoon poultry seasoning
  • 4 (14 ounce) cans chicken broth
  • teaspoons chicken bouillon
  • ounces egg noodles
  • cups cooked chicken
  • parsley
  • Directions

    1. 1
      Melt butter in large pot.
    2. 2
      Saute the celery, carrot and onion for 2 minutes.
    3. 3
      Add potato, thyme, poultry seasoning, chicken broth and boullion.
    4. 4
      Bring to a boil.
    5. 5
      Add noodles and chicken and cook on low for 20 minutes.
    6. 6
      Sprinkle with parseley.

    Mizz nezz... I had some chicken thighs thawed out and suddenly got a taste for soup. Had this one written down and boy this soup really hit the spot.. excellant flavor and the thickness was perfect.. only change I made was to use 1/2 tsp. Thyme and poultry seasoning.. dh said it's better than 5 stars and I agree,, thanks for posting.

    I made this today but added one cane of condensed milk. I didn't use poultry seasoning or parsley but keep everything else the same. Fab! Will make again. Both kids had two helpings.

    I've also found that if you add a can of evaporated milk when you add your chicken and noodles, it thickens the soup up and makes it nice and tasty.

    This was my very first time making chicken noodle soup. And I want to thank you Inez for such a simple recipe. It was delicious we all had 2 bowls. Made this for DH as he is recovering from surgery and he said it was just perfect! My DD wanted some for luch today too. Thanks again for the delicious, easy recipe!!
