Avocado Lime Salad

A great vegan salad using avocado, tomatoes and scallions. Adapted from Vegetarian Times magazine. A popular Spanish and Mexican recipe.

SERVES 4 (change servings and units)

Ingredients

Directions

    In a medium glass or ceramic bowl, whisk together 2 tablespoons lime juice and 1 teaspoon salt.

    Add tomatoes, avocados, scallions and garlic.
  3. 3
    Using rubber spatula, gently fold to combine.
  4. 4
    Season to taste with pepper.
  5. 5
    In large bowl, whisk together olive oil, cumin, remaining tablespoon lime juice and 1 teaspoon salt.

    Add lettuce and toss.
  7. 7
    Season to taste with pepper.
  8. 8
    Divide lettuce among plates.
  9. 9
    Top each with mound of avocado mixture.
  10. 10
    Top with cucumber slices.
  11. 11
    sprinkle with cilantro and serve.

My DH loved this salad! Since there were just three of us, I cut back to two small tomatoes and one avocado and left everything else the same - it was the perfect amount for a main dish meal tonight. It does take a bit of prep time, but well worth it. Made for Zaar Stars.

    This salad was so fantastic! I loved the mixture of flavors from the cilantro, garlic, and lime (though I used calamansi because it's easier to find in the Philippines and tastes almost the same). And any salad with avocado in it is usually a hit with me. I really could eat this salad everyday except that it takes more time than my usual toss together salad. Thanks so much Sharon! I'll be making this again...this week! Made for New Tag 2008.

    Very tasty! I couldn't find boston lettuce so I used baby field greens. I served this with black bean soup and spanish rice. I loved the combination of flavors. Thanks!
