Baby peas cooked with onions and seasoning.

SERVES 8 (change servings and units)

    In a heavy pot, melt the butter, then add the onion, celery, and seasonings.

    Cook, uncovered, over medium heat, until onions are wilted.

    Add peas.
  4. 4
    Dissolve cornstarch in cold water and add to pot, stirring constantly.
  5. 5
    Cook, uncovered, over medium heat for about 10 minutes.

    Add pimiento.

Wasn't sure I wanted to be this heavy handed with my delicate garden fresh petit pois but it was lovely. I'll do it again next year. I used olive oil and roasted red pepper.

    Love these! I added a little sugar, since I think peas ought to have a little sweetness. Very good, thanks for sharing!

    I have actually been making a similar recipe for many years. I used frozen baby peas and left off the cornstarch. These went very well with my sourthern fried chicken dinner and Garlicky Mashed Potatoes. Made for ZWTIII.
