Quick and Easy Egg Bake- Dinner Favorite!!

This one is a quick and easy work night dinner that my family requests frequently. You can change it up to use leftovers- but these are the common ingredients we use on a regular basis- adults and kids a like seem to enjoy it!! Could be a breakfast/brunch or dinner. DH and I like to top it with salsa and sour cream, but the kiddos eat it plain! ****I couldn't find the seasoning I use in the list so I put it as a note on the side - it is Johnny's Salad Elegance and it is great on almost everything - garlic bread, eggs, sautéed veggies, dips, pastas, you name it!********

SERVES 4 -6 (change servings and units)

Ingredients

    Chop upper half to 2/3 of stalks of asparagus into 2 inch pieces.
  2. 2
    Discard lower portion of stalk.
  3. 3
    Chop onion into desired size pieces.
  4. 4
    Preheat oven to 400 degrees.
  5. 5
    In a pan sauté ham and onions with butter salt and pepper for 2 minutes.
  6. 6
    Add asparagus and cook for another 3 minutes or until lightly cooked (should still be somewhat crunchy).

    Spray square glass baking pan with Pam (or other oil).
  8. 8
    Whisk eggs and pour into baking pan.
  9. 9
    Add sautéed ham and veggies.
  10. 10
    Sprinkle entire egg mixture with cheese.
  11. 11
    Cover with foil and bake for 35 minutes.

    Cool for 5 minutes and cut into large squares.

    Garnish with salsa and sour cream if desired.

    Enjoy!

What a great lazy week end brekkie! I didn't have the salad seasoning requested so I used a Penzey's salad seasoning mix and it worked well. Also, I had to use regular onion and I used 1/2 of the amount of cheese (Gotta try to trim the fat somewhere!). The aroma is wonderful and I couldn't help thinking how perfectly it would be in a big chafing dish for a brekkie buffet. I love using asparagus, DH picks it out and puts it on my plate! Made for ZWT3.

    This was so yummy! I used bacon in place of the ham because that's what I had on hand. This was quick and easy and so delicious! Made for ZWT3 2007.
