Linda's Thai Sweet Chili Sauce for Dipping (Egg Rolls, Sushi)

I created this recipe to make Thai Chicken Wings this weekend, and it was great! Use this sauce in any of your Thai recipes asking for Sweet Chili Sauce. This recipe is medium hot, so use the chilis according to your taste! I also use it on my sushi, egg rolls, and spring rolls, and it is incredible!

Ingredients

  • tablespoons sambal oelek or chili pepper
  • cup rice vinegar
  • teaspoons salt
  • 1/3 cup sugar
  • teaspoons fresh garlic, minced
  • teaspoon gingerroot, grated
  • tablespoons cornstarch
  • 1/4 cup water
  • Directions

    1. 1
      In a small pan add the first 6 ingredients together, over low heat.
    2. 2
      Stir constantly until mixture thickens to a syrupy consistency, about 5 minutes once it starts to simmer. It reduces quite a bit.

      Mix well, and let sit until hot.
    4. 4
      Mix the cornstarch and water together in a small bowl and add to the sauce. Mix well. Let cook until it starts to thicken, then remove from heat.

      Let cool, and use in any of your Thai recipes asking for Sweet Chili Sauce.

    I made some Thai Egg Rolls the other night for a snack and was looking for something good to dip them in. I came across this and decided to try it. I am SO glad I did! Delicious sauce flavored with both spice and sweet. Love the combination of both! I can see this sauce being used for many things, and I am going to try it on my sushi next! By the way, your tutorial on sushi making is excellent Linda. I have used it several times now and the end results are great! I have enough sauce left over from making this, so sushi here I come! I bet it will be really good on those tempura shrimp and crab sushi.

    I have had this quite a few times now with everything from sushi, to egg rolls, crab rangoon, chicken wings, Thai dishes including on top of rice, Chinese dishes with pork, chicken, beef and shrimp etc. It is very versitile and an excellent condiment to have on hand in the fridge for all kinds of uses.     I used this sauce over Jasmine rice and Stir-Fried Veggies. We dipped our Egg Rolls in it too. It was delicious and everyone here loved it! We had along with Thai Chicken Breasts. Great combination and one that we will be having often!
