Mandarin Orange Surprise

I got this recipe from a friend at my wedding shower. It is a very light dish. It can be used as a salad or a dessert.

SERVES 6 -8 (change servings and units)

Ingredients

Directions

  1. 1
    Mix together crackers, butter and sugar.
  2. 2
    Press in a 13x9-inch baking dish. (Save a little bit of the crumbs for top).
  3. 3
    Refrigerate this while making rest of recipe so it becomes firm.
  4. 4
    Fold the rest of ingredients together.
  5. 5
    Spread over crumbs in dish.
  6. 6
    Top with remaining crumbs.
  7. 7
    Refrigerate until ready to serve.

I took this to a potluck and came home with nothing left. I was asked for the recipe a lot. It is a light and refreshing dessert.

    We enjoyed it, but it is definitely on the very sweet side. The crumb crust didn't hold together very well, so I might suggest increasing the butter slightly or decreasing the crackers (I used exactly 60). It was also difficult to serve it up neatly as the filling layer was very soft. I tried freezing it for a half hour before serving and that helped. If I were to make it for an event, I might be tempted to portion it out in individual servings "parfait" style, top it with whipped cream and sprinkle the additional crumbs on top. I selected this for Zaar Tag!

    Count me among those who 'like it SWEET' & this one is that! For some reason or other I find myself gathering more & more recipes that include mandarin oranges, & this particular one makes for a great-tasting dessert! I particular like the addition of Ritz crackers! Will be making this one again & soon! Thanks so much!
