Dill Pickle Salsa

Redneck Epicurean

This is one out of my recipe files from Gourmet class. We had to come up with something "different". What's more different than salsa made with a dill pickle? But, it is good, even if I do say so myself. It's not hot, but if you prefer a hotter salsa, use the hot dill pickles. The yield will depend on the size of your tomato.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

  1. 1
Dice the tomato and discard part of the seeds.
  2. 2
Stir together all the rest of the ingredients.

Very delicious addition to our Thanksgiving menu for the buffet table of appetizers (like we needed MORE food to eat?) ... heheheh! Made a day ahead so we could sample and test and snitch! Sure to be a pleaser when the crowd arrives.

I made this today to go on hot dogs, and it was so easy and delicious. I would not have thought of adding cilantro to this, and it really made this tasty. I added some chopped pepperocini peppers and some Gedney Zinger Pickle Chips (a spicy bread and butter type pickle). I will be making this from now on to go on burgers, hot dogs and brats! Oh and looking at the recipe, I forgot to add the oil.

This was a simple and delicious salsa. I knew I'd love it just by the ingredients. I made the recipe to the "T" and served it on Beef Brats hotdogs. This will surely be a convenient and tasty dish to serve while entertaining on my boat this summer. The cilantro really gives this salsa a nice fresh taste and the pickle juice made it perfect for the hotdog lovers.... instead of having everything seperate, I will now make this as a side slaw for burgers too. Wonderful recipe! So glad I picked it for ZWT3 How *does* your *Garden* grow ~V
