Baked Salmon Fillets

I used my daughter's recipe with some modifications. For those who don't really fancy the taste of fish, this recipe will cure you of that. It is light and no overpowering fishy taste. Serve with rice and a vegetable of your choice (we like it with steamed broccoli).

Ingredients

  • 2 salmon fillet, 1-1/2 inch wide and approximately 1 inch thick (at the thickest point)
  • tablespoons olive oil
  • teaspoon garlic powder
  • tablespoons Italian seasoned breadcrumbs
  • tablespoon parmesan cheese or romano cheese, grated
  • 1 lemon, quartered (optional)
  • Directions

    1. 1
      Preheat oven to 375°F.
    2. 2
      Pour 1 Tbsp of olive oil evenly in the bottom of a 9x9-inch glass baking dish.
    3. 3
      Place the fillets in the bottom of the baking dish.
    4. 4
      Pour the remaining olive oil over the fillets.
    5. 5
      Sprinkle half of the garlic over the fillets.
    6. 6
      Sprinkle the bread crumbs over the fillets.
    7. 7
      Sprinkle the cheese over the fillets.
    8. 8
      Bake for approximately 18 to 20 minutes making sure not to over bake.

      Squeeze the juice of a lemon quarter over each fillet (optional).

    My husband and I really enjoy this recipe! Simple to make and tastes fabulous! This was my first time cooking fresh salmon and I will definately be making this one again!

    This was very easy and yummy. I use some wild salmon fillets from Trader Joes. I think next time I will leave off the lemon juice...just didn't appeal to me on this dish, and add some salt to the fish, or use garlic salt. With those changes, it's a repeat in my cookbook. Thanks for an easy meal!

    This was such an easy, delicious dish! I cut the recipe in half & used a 1/2 lb salmon fillet. I also used extra lite olive oil. The directions didn't specify, but I just mixed the remaining garlic powder with the breadcrumbs & parm cheese. I had a problem with the baking time, but I think that was because of my specific cut of frozen salmon. It was thin on one end & thick on the other, so that it cooked less evenly! Next time I will pound it thin to make it cook at the time allotted. The oil made the salmon nice & moist with a crunch from the topping-plus a great garlic flavor. I also sprinkled the top with 2 tbsp mozz cheese during the last 5 min-so yummy! Thank you for sharing this recipe.
