I love how these are cooked in the micro wave! Perfect for those hectic nights. I cut them into slices and sprinkles with breadcrumbs and cheese. Made for ZWT 3!

I cooked this in the microwave and it took 7 1/2 minutes on mine to get it soft. 'Spiked' it with olive oil, lots of freshly-ground black pepper and parmesan - no need for salt. This is going to be made a lot - I'm mad about onions and it doesn't get easier than this recipe!
