Cranberry Bliss Bars (Starbucks Copycat )

This recipe recreates the popular bars that are offered at Starbucks every Christmas season. The texture is like a chewy brownie, but the flavors include white chocolate, zesty orange, and cranberry. To make them look just like those at Starbucks, cut them in large square and then into triangles. **For Valentine's Day, I made heart shapes and tinted the drizzle with red food coloring - they were beautiful!

    Preheat the oven to 350 degrees (325 for a glass or dark pan). Prepare a 9x13 pan (or 10x15 pan) by lining it with parchment paper or use a non-stick spray.

    Bars: With an electric mixer, beat together butter and sugars until fluffy; add eggs and orange extract and beat until combined.

    Add the flour, baking powder, and ginger and beat briefly. Add the cranberries and chips, stirring just to blend and being careful not to overmix.

    Note - my Lightened version: OMIT half the butter (1/2 cup), OMIT 1/2 cup Brown sugar. ADD 1/2 cup applesauce and 1/2 cup Brown Sugar Splenda mix.

    Spread thick batter in prepared pan and bake 350 (23-24 minutes for 10x15, 27 minutes for 9x13), until the edges are light brown and a skewer inserted into the center comes out mostly clean. Let it cool completely.

    Frosting: Blend cream cheese and butter until fluffy. Add orange extract and confectioner’s sugar and beat until frosting is fluffy and spreadable (adding 1 t. milk if needed). Spread evenly over cooled bars.

    Garnish: Use a zester to remove rind from an orange. Chop 1/3 cup Craisins coarsely. Sprinkle this garnish of orange zest and Craisins over frosted bars.

    For the final topping, mix white chocolate and oil in a glass measuring cup. Microwave 60% power for 1 minute; stir. Repeat 1 more minute at 60% power; stir. Use a fork to drizzle the white chocolate in thin diagonal strips across the bars.

    Allow one hour for the white chocolate to set before cutting. **To make signature Starbuck triangles, cut jelly roll pan into 20 large squares (5 cuts by 4 cuts with the knife). Then cut each square in half diagonally (see additional photos which show this step).

Wasn't that impressed with these...especially after all the work that went into them. I expected them to be dense, sort of like a blondie, but they weren't really anything more than a piece of frosted white cake (with white chocolate and craisins added in). Won't be trying them again.

    These were good - I have never had the Starbucks version, but I like orange and cranberry and the picture looks so good. I may have done something wrong, though, because mine puffed up quite a bit and had a sort of dry, crumbly, cake-like texture. The taste was really good, though. I think I used a 10x15 pan this time. If I make again, I'll use a slightly bigger pan to get a flatter bar. Thanks for a nice addition to my Christmas treat tray.

    Absolutely fabulous bars - a wonderful change from chocolate everything and so very festive for the holidays. I followed the simple recipe very easily. The only thing that I did was to add more orange zest than called for and to double the cranberry toppings and white chocolate glaze. I did contemplate adding a dark chocolate to this in the glazing part of the recipe. Most likely I'll still experiment with that, but I'm thinking that it would be a nice addition. I'll let you know! Update! I did try the dark chocolate, substituting it for the white chocolate in the topping. It was a beautiful contrast to the white frosting and red cranberries - very pretty. And I gave the recipe to about 5 friends because they loved it so much. Thanks Cookin'Diva

    This was absolutely wonderful! I decided late last night that I had the undyind dresire to make something so I decided to make something sweet. I like how the instructions were easy to follow and they helped out a lot with how things needed to be. I had a little trouble with the drizzle on top but I made it work. I brought the left over bars to work and everyone loved them. I will diffenelty be making this again!
