Lemon Cheesecake Bars

I revised this recipe from Eagle Brand. This is much more to my liking. It has gotten raves.

SERVES 36 (change servings and units)

Ingredients

    Preheat oven to 350°.
  2. 2
    Combine graham cracker crumbs, sugar, and butter in a mixing bowl.
  3. 3
    Set aside about 1/2 cup.
  4. 4
    Press remaining mixture into a 9x13 pan.
  5. 5
    Bake 6 minutes.
  6. 6
    Cool on wire rack.
  7. 7
    With mixer, beat cream cheese until fluffy.
  8. 8
    Gradually beat in sweetened condensed milk and lemon juice.
  9. 9
    Add eggs, beat unil combined.
  10. 10
    Spoon mixture atop crust in pan.
  11. 11
    Sprinkle with reserved crumbs.

    Bake 30 minutes, or until knife comes out clean.

    Cool on wire rack 1 hour.

    Chill in refrigerator. Store in refrigerator.

I made this recipe for Mother's day and appreciated finding a recipe that didn't use a lot of sugar. Instead of graham cracker crumbs, I used a box of Vanilla wafers and was really pleased with the results. Everyone loved them! Thanks for the recipe, Lane.

    I made these for a neighborhood gathering and everyone loved them. For something so simple to make, they really turn out as an especially yummy treat. Just the right amount of lemon flavor and great cheesecake texture - thanks for sharing!
