Tabule (Arabic Salad)

This middle Eastern recipe is easy to make is very popular in the United States and all over the world. It is very tasty, nutritious, and can be served with any meal, or my itself. The Parsley is an excellent source of Vitiman C, and the Bulgar high in Fiber. Everyone loves tabule and almost everyone serves seconds.

Ingredients

  • 1/2 cup fine bulgur wheat (cracked wheat)
  • 2-3 large ripe tomato, diced
  • bunches of chopped parsley
  • bunch of chopped green onion
  • 1/2 bunch of chopped fresh mint or 3 tablespoons dried mint
  • 1/2 cup vegetable oil or olive oil
  • 3 lemon, juice of
  • tablespoon salt
  • 1/2 teaspoon black pepper (optional)
  • Directions

    1. 1
      Soak Bulgar (cracked wheat) in water and drain.
    2. 2
      place Bulgar in a large bowl and add juice of one lemon to Bulgar and mix.
    3. 3
      leave bulgar sitting until water and lemon juice is absorbed (around 45 minutes).
    4. 4
      Add all remaining ingredients to Bulgar and mix well. add more lemon juice or salt if desired.

      Serve over fresh lettuce leaves.

    The bulgur to parsley ratio is really nice here. I might use red onions next time as a personal preference. Served with Lebanese Chicken, Creamy Roasted Garlic Hummus and warmed pitas. Thanks for posting!
