This can be used as a salad or dessert, and is a real kid-pleaser. It's also an easy accompaniment to bring to a potluck or holiday dinner.

    In large bowl, add dry pudding mix to Cool Whip, and beat until blended, scraping bottom and sides of bowl.

    Add remaining ingredients and mix well.
  3. 3
    Turn into serving dish and sprinkle with crushed peanuts.

    Cover and refrigerate overnight.

Made this for a church gathering and everyone who tasted it loved it! It had a great flavor, but with the peanut allergies out there I suggest that you put a little sign in front of it stating that it contains peanuts if you serving it to a crowd. Also, I used both green and red apples to add visual appeal, along with placing it in a clear glass bowl.

    So glad to have found this recipe again - was lost in a move. It's always a hit. The peanuts can get soggy in any left overs if not eaten within a day. Great fall salad.

    This is a wonderful salad/dessert. We made multiple batches for my son and his bride's wedding reception. Then I suggested it in my "Up North"community for a luncheon. There are rave reviews and requests for the recipe whereever i take it. I do adjust it by using fat/sugar free pudding and lite Cool whip. rosiesue
